Haar vriendschap met de Haagse topchef <a href=\"https:\/\/kingstreet-magazine.com\/niemand-doet-chef-kok-marcel-van-der-kleijn-van-tapisco-na\/\">Marcel van der Kleijn<\/a>, met wie ze jaarlijks het festival Haagse Wereld Hapjes organiseert op het Lange Voorhout, legde daarvoor de basis. \u201cHij bracht me op het idee voor een boekingsbureau voor sterrenchefs op locatie,\u201d vertelt ze in de lounge van sterrenrestaurant Calla\u2019s aan de Laan van Roos en Doorn. \u201cZoiets bestond nog niet en ik had al jaren ervaring met boekingen en evenementen met mijn vroegere bedrijf.\u201d<\/p>\n<div id=\"attachment_5200\" style=\"width: 1034px\" class=\"wp-caption alignnone\"><img aria-describedby=\"caption-attachment-5200\" class=\"wp-image-5200 size-large\" src=\"https:\/\/kingstreet-magazine.com\/wp-content\/uploads\/Lisette_sterrenchefbox_O5A3755-1024x683.jpg\" alt=\"sterrenchef callas \" width=\"1024\" height=\"683\" \/><p id=\"caption-attachment-5200\" class=\"wp-caption-text\">Lisette Ernens en Ronald van Roon maken een gerecht uit de Sterrenchef box.<\/p><\/div>\n<p style=\"font-weight: 400;\">Al snel strikte Ernens grote namen uit het hele land. \u201cFran\u00e7ois Geurds van FG in Rotterdam, Paul Kapp\u00e9 van Monarh in Tilburg, Edwin Vinke van De Kromme Watergang in Zeeland,\u201d somt ze op. \u201cIedereen zag het zitten.\u201d<\/p>\n<h4>Sterrenchef Box<\/h4>\n<p style=\"font-weight: 400;\">En terecht: Sterrenchef.com bleek een gat in de markt. \u2018RTL Boulevard\u2019 pikte het nieuws op en de boekingen voor private dining, gala\u2019s en bruiloften stroomden binnen. En toen: corona. \u201cTja, alles geannuleerd. Dus moest het over een andere boeg.\u201d In no time was daar de Sterrenchef Box: culinair genieten van een door de chefs zorgvuldig samengesteld menu om thuis af te maken, met behulp van een tutorial.<\/p>\n<p style=\"font-weight: 400;\"><div class=\"fl-builder-content fl-builder-content-1291 fl-builder-template fl-builder-module-template fl-builder-global-templates-locked\" data-post-id=\"1291\"><div class=\"fl-module fl-module-html fl-node-5e6e52367938f\" data-node=\"5e6e52367938f\">\n\t<div class=\"fl-module-content fl-node-content\">\n\t\t<div class=\"fl-html\">\n\t<hr STYLE=\"height: 2px; color: #a99179; background-color: #a99179; border: solid #a99179 0px;\">\n<p style=\"text-align: center;\"><span style=\"font-size: 25px; color: #94abb5; font-style: italic; font-family: 'Playfair Display';\"><\/span><\/p>\n<\/div>\n\t<\/div>\n<\/div>\n<\/div><\/p>\n<p style=\"font-weight: 400;\">Of de restaurants nou wel of niet open zijn en of er wel of niet door de sterrenchefs aan huis gekookt kan worden, de box is een blijvertje. Ernens: \u201cVaak bestellen mensen \u2019m omdat ze iets bijzonders op tafel willen zetten, maar niet de hele dag in de keuken willen staan. Maar er zijn ook ouders die met hun kinderen niet vast willen zitten aan de tijden van de oppas en mensen die niet willen \u2018bobben\u2019.\u201d<\/p>\n<p style=\"font-weight: 400;\">Ze herinnert zich \u00e9\u00e9n heel bijzonder verzoek. \u201cEen meisje dat stervende was, bestelde een box om op een intieme manier afscheid te nemen van haar dierbaren. Tijd om het koksbuis aan te trekken om met chef-kok Ronald van Roon een gerecht uit de box van Calla\u2019s te demonstreren: gebrande yellowtail kingfish met groene olijf, een cr\u00e8me van wasabi en meloen. \u201cHet menu bestaat uit vier gangen, dit is het voorgerecht. Je kunt de box natuurlijk uitbreiden met bijpassende wijnen,\u201d aldus de immer kalme Van Roon.<\/p>\n<p style=\"font-weight: 400;\">Omdat het oog ook mee-eet, heeft de chef duidelijke instructies gemaakt. \u201cZo\u2019n cr\u00e8me uitsmeren met een bolle lepel zullen mensen thuis niet snel bedenken,\u201d knipoogt hij.<\/p>\n<h4 style=\"font-weight: 400;\"><strong>Kwaliteit<\/strong><\/h4>\n<p style=\"font-weight: 400;\">Om zijn sterrenkwaliteit te waarborgen, kiest Van Roon ingredi\u00ebnten die de reis goed overleven. \u201cWe kiezen bijvoorbeeld niet voor een krokantje dat snel taai wordt of kleine takjes die snel verleppen.\u201d En hoe zijn de reacties? \u201cMensen vinden het leuk om te doen en tegelijk thuis de restaurantbeleving te ervaren, valt me op.\u201d Ernens vult aan: \u201cOok voor de restaurants is het fijn dat ze op deze manier vrijdags en \u2019s zaterdags meer \u2018gasten\u2019 kunnen bedienen.\u201d<\/p>\n<div class=\"fl-builder-content fl-builder-content-1293 fl-builder-template fl-builder-module-template fl-builder-global-templates-locked\" data-post-id=\"1293\"><div class=\"fl-module fl-module-html fl-node-5e6e52fce74ee\" data-node=\"5e6e52fce74ee\">\n\t<div class=\"fl-module-content fl-node-content\">\n\t\t<div class=\"fl-html\">\n\t<hr STYLE=\"height: 2px; color: #a99179; background-color: #a99179; border: solid #a99179 0px;\">\n<p style=\"text-align: center;\"><span style=\"font-size: 25px; color: #94abb5; font-style: italic; font-family: 'Playfair Display';\"><\/span><\/p>\n<\/div>\n\t<\/div>\n<\/div>\n<\/div>\n<p style=\"font-weight: 400;\">Als de klus is geklaard, komt Ernens met n\u00f3g een culi-nieuwtje. Op 25 en 26 maart 2022 houdt ze met Slot Zeist het SterrenPreuvenement met tien sterrenchefs. \u201cEen culinaire wandeling door Slot Zeist met in elke zaal chefs die hun gerechtjes presenteren: van Servais Tielman van \u2018Beluga loves you\u2019 in Maastricht tot Jonathan Zandbergen van Merlet in Schoorl.
