Every October the Dutch culinary world watches closely as Michelin hands out its stars. In and around The Hague, established names continue to shine while new restaurants are clearly knocking on the door. These kitchens are already cooking at Michelin level.

Every October the Dutch culinary world watches closely as Michelin hands out its stars. In and around The Hague, established names continue to shine while new restaurants are clearly knocking on the door. These kitchens are already cooking at Michelin level.
1. Callas *
Tucked away on the Laan van Roos en Doorn, Calla’s has been performing at star level for years. Since July 2025, Ronald van Roon and Bianca Fellinger have been full owners, without changing the restaurant’s character. The classical French kitchen remains light and pure, with vegetables and herbs coming from their own garden in Wassenaar. Calla’s moves with the times, offering more vegetarian and vegan dishes, as well as non alcoholic wine pairings.

2. Azurite
At the beginning of September, Mario Ridder opened Azurite in Delft, located in the Huis van Delft. The intimate restaurant seats twenty four guests and features an open kitchen, private dining and a whisky bar. Ridder previously earned two Michelin stars at De Zwethheul and later a star with Joelia in Rotterdam. He describes Azurite as his most personal project yet, driven not by grandeur but by emotion. With a wine cellar holding twelve thousand bottles, the opening came just too late for the current guide, but Azurite is already seen as a strong contender for 2026.

3. Triptyque *
Triptyque in Wateringen is built around chef Niven Kunz’s eighty twenty principle, where vegetables and fruit take the lead, supported by meat, fish or dairy. His cooking is creative and deeply local, with terroir at the heart of each dish. Think carrot transformed into a plant based steak tartare. The result is bold, sustainable and unexpected. Triptyque holds both a Michelin Star and a Green Star.

4. ’t Ganzenest *
Just nine months after opening, ’t Ganzenest was awarded a Michelin star. Chef Erik Tas cooks classic French cuisine with a modern touch, surrounded by greenery. The atmosphere is homely, with linen tablecloths and a chefs table. Guests can come for lunch, dinner or stay overnight. Visitors travel from across the region. For Tas, the most important thing is that people feel at home.

5. Central Park *
For the third year in a row, Central Park retains its Michelin star. Housed in the listed estate Vreugd and Rust, the kitchen is rooted in classical technique with a strong focus on the seasons. Chefs Tim Bood and Hette Hettema cook with precision and restraint, letting flavour and craftsmanship lead. The wine list features over two thousand seven hundred references, presented with ease by head host Joey de Kruijf. A welcome extra is that Central Park also operates as a boutique hotel.

6. Calva *
In early 2025, Calva moved to the Markt in Nootdorp and immediately earned its first Michelin star. Chef Tom Beckers serves modern French cuisine centred on seasonal produce and clean flavours. The surprise menu changes regularly and is personally introduced by the chef. The shellfish bisque is a constant and has become a signature moment. With its open kitchen and direct approach, the experience feels personal and unforced.

7. Novaela *
Novaela is located in a seventeenth century building at the Bagijnhof in Delft. In October 2025, the restaurant received its first Michelin star. Chef Daniël Duijster Gomero cooks with lightness and balance, focusing on fish and shellfish. The menu changes every two months and guests can also order à la carte. Since the star was announced, securing a table has become a matter of luck.

8. EVE by Erik van Loo
At the start of 2026, the full kitchen team of Parkheuvel will close its doors for four months to build EVE by Erik van Loo in The Hague. The restaurant will open in a monumental building opposite Noordeinde Palace, developed by RE:BORN.Chef Erik van Loo brings his signature style to a more accessible all day setting, with cooking at Michelin level from day one.
